This large chef knife is hand forged from, unusally for me, a stainless steel laminate. The cutting edge of the knife is carbon steel, so the dark steel just at the edge is reactive (can rust), but the outer layers of the blade are stainless steel. The handle is handmade from spalted beech with a brass cap.
