Peckham Cherry Plum and Rippled Maple Chef
This chef knife is hand forged from laminated steel; a mild steel jacket on either side of a 26c3 (spicy white) high carbon steel core. This knife is medium weight, feeling substaintial in the hand but thin behind the edge for cutting performance. The handle is handmade from a gorgeous piece of Cherry Plum from Peckham in London, combined with some rippled Maple and a stainless steel pin. The Maple is a souvenir of sorts, brought home with me after my time spent training with Master Bladesmiths in the US last spring.
This blade is made with high carbon steel which, unlike stainless steel, is 'reactive'; this means the blade will develop a patina, changing the appearance of the blade surface as you use it (see T&C's). I prefer to work with high carbon steels over stainless steels due to their incredible edge retention and ease of sharpening at home. This blade can rust if not properly cared for. Handwash only.
