This chef knife is hand forged from an iron clad san-mai steel with a high carbon steel core. It's a nice size for a general purpose knife, and ground very thin for cutting performance. I've made the handle from two pieces of spalted hornbeam from North London.

Note: This blade is made with carbon steel which, unlike stainless steel, is 'reactive'; this means the blade will develop a patina and will change the appearance of the blade surface over time and can rust if not properly cared for. Handwash only.
