This large chef knife is hand forged from my own blend of mild steel san-mai steel with a high carbon steel core. It's got a nice forged taper, a heavier weight than my usual chef knives and ground thin for cutting performance. The handle is made from a rare piece of 5700 year old bog yew with a scorched mulberry wood ferrule.
